Observation (CORRECTED DURING INSPECTION): Observed food colouring agent being used. When inquired, operator indicated that they are BUSH Red Orange 7802. Explained to operator that these are not suitable for human consumption and must be discontinued.
Corrective Action(s): Required operator to discontinue using this agent and find a replacement. BUSH colouring agent discarded at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Observed the following items not in sanitary condition
1. Can opener had dried up food debris on it
2. Vegetable dicer had dried up food debris on it
Corrective Action(s): Required operator to clean and sanitize the noted items. Once used, all utensils must be cleaned and sanitized. Operator started to clean the items at the time of inspection

Observation (CORRECTED DURING INSPECTION): Observed the following:
1. Food containers stacked on top of another, directly touching the food.
2. Cream container stored with cut vegetables in the prep cooler inserts
3. Observed containers for storing cut up limes and other food products to be stained, damaged and not in sanitary condtion.
4. Several items in the walk-in cooler not properly covered
5. Observed food items stored on stairs in the back area
Corrective Action(s): Required operator to remove all containers directly on top of another food product. Double stacking must not happen. Cream container must be removed from the food and stored separated in a cooler, not directly touching food items. Items in the walk-in cooler must be protected with appropriate covers. All foods must be stored off the ground and in appropriate locations, protected from contamination. All foods must be stored in a clean container without any damage. Operator addressed all items at the time of inspection

Observation: Observed flies in the back storage area where the potatoes were.
Corrective Action(s): Required operator to remove all items that could attract pests and store foods protected and away from pests.

High temperature dishwasher in good working order; detected 75.2 C at plate level after final rinse cycle
All coolers at 4 C or lower; all freezers at -18 C or lower. No hot holding units observed at the time of inspection
Ice machine in sanitary condition
Beverage prep area maintained in sanitary condition; ice cream scoop dipper well in good working order
QUAT sanitizer spray bottles available throughout facility; detected 200 ppm of QUAT
