Operator has submitted food safety plan for rotisserie chicken and has an agreement with the upstairs "Garcha Bros Meat Shop" operator to cook the food upstairs in the large rotisserie oven.
The raw meat is marinated downstairs. When a call for a rotisserie chicken order is received, the operator brings the raw meat to the upstairs permitted kitchen and cooks it in the oven. Once it has finished cooking, the operator packages the chicken upstairs and brings it directly do the customer downstairs. There is no hot holding of the food item downstairs, and cooked food item is not handled downstairs as this is a raw meat area and has high risk of potential contamination.
