- Underneath equipment at sushi prep area
Corrective Action(s): Clean all of these areas. Ensure cleaning is done regularly to avoid accumulation of debris and attracting pests.

Inspection conducted during the restaurant's break period

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, prep, glass door) are ≤ 4°C
- Walk-in freezer is ≤ -18°C
- Hot holding units (miso soup, rice) are ≥ 60°C
- High temperature dishwasher is available. Final rinse temperature reached 73.9°C at the plate level.
- Bleach is available. Ensure 100 ppm bleach sanitizer is available when restaurant is in operation
- Dry storage is satisfactory
- Ice machine is maintained. Ice scoop is stored properly.
- Invoices available for review. Freezing requirements for met for sashimi fish (-20°C for 7 days)
- No signs of pests observed during inspection
- Premise is well lit
- Permit is posted
