Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available on site for sanitizing food prep tables/food contact surfaces. Operator brought a new bleach bottle at the time of inspection and prepared 200ppm bleach solution.
Corrective Action(s): Ensure that food grade sanitizer solution is available on site for sanitizing food contact surfaces.

Observation: *REPEATED VIOLATION*
1. Heavy rodent dropping were observed in the following areas:
- Dry storage room - floor, corners and shelves
- Behind the pizza oven
- Under counter near coffee machine
- Behind and along the wall near dishwasher
2. Dead mouse was observed on the mouse trap in dry storage room.
Corrective Action(s): 1. Remove the rodent droppings and disinfect the area with 1 part bleach to 9 part water solution. Wear proper PPE during cleaning.
2. Clean and sanitize any utensils/food contact surfaces that got in touch with mouse droppings.
3. Reorganize the dry storage room and do not leave any boxes/bins on floor to facilitate frequent cleaning in dry storage room.
4. Contact your pest control company and discuss the issue to implement the control measures.

Comments

Routine inspection conducted. The facility was re-opened after 2 days.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler at 4C
- Walk in freezer at -12C
- Stand up freezers (in front) at -16C and -18C.
- Prep cooler at 2C
- No hot holding at the time of inspection.

Storage:
- All food products were found either in original packaging or covered inside coolers.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- High temp mechanical dishwasher reached a temperature of at least 71C at dish surface.
- Ice machine was turned off and was not in use.

Pest Management:
- Professional pest control company conducts routine checks.
- Mechanical traps were present throughout the facility.

- Both front and back doors were closed at the time of inspection.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator and staff has valid FoodSafe Level 1 certificate.

Note: Improvement required in terms of general sanitation of the facility.
