Observation (CORRECTED DURING INSPECTION): Tartar sauce and cut onions stored at room temperature for take-out orders.
Corrective Action(s): Items returned to cooler at time of inspection. Do not store potentially hazardous foods at room temperature. Store in cooler until needed or only have small portions out at room temperature to ensure portions are used within 2 hours. If portions kept at room temperature are not used within 2 hours, discard.

Observation (CORRECTED DURING INSPECTION): Several dirty knives found with old food debris on middle shelf of food prep cart/table.
Corrective Action(s): Staff washed and sanitized knives at time of inspection and placed clean knives on magnetic knife holder.

Observation (CORRECTED DURING INSPECTION): Fish thawing in sink submerged in still water. Internal temperature of fish was still below 4C
Corrective Action(s): As previously discussed, thaw fish in cooler overnight or thaw under cold, running water. Do not thaw food in still water or at room temperature.

Observation: Cleaning of floors required in the following areas:
- corner by hot water tank (in both units)
- underneath deep fryer - also remove cardboard and do not use cardboard to line floors as this cannot be easily cleaned and sanitized
- walk-in cooler in second unit
Corrective Action(s): Correct by: 1 week

- Pest control in place; operator emailed pest reports at time of inspection
- No signs of pest activity noted at time of inspection
