-Coolers operating at/below required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
-Hot holding units operating above 60'C. Food cooking temperature log maintained.
-Temperature monitoring system in place. Log maintained.
-200ppm Quats available in buckets to hold wiping cloth. Automated dispenser at correct concentration.
-High temperature dishwasher achieved 73.2'C at the plate level after final rinse.
-Time track system being followed properly.
-General food storage practice satisfactory.
-No evidence of pest activity observed. Professional pest control company contracted.
-Washrooms satisfactory.
