Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods such as hummus, tzatziki, feta cheese, and rice filled grape leaves in the non-functioning prep cooler had an internal temperature of 8-9 C.
Corrective Action(s): The above mentioned foods were discarded. Do not store potentially hazardous foods at more than 4 C.

Observation (CORRECTED DURING INSPECTION): Dessert made at home brought to premise for sale to the public.
Corrective Action(s): Food must only be prepared in an approved kitchen. Foods are not allowed to be made at home and brought on-site for sale.
Operator was instructed to not sell this home prepared foods.

Observation: Mice droppings observed near the oven, furnance and ice machine.
Corrective Action(s): Droppings are to be removed daily and area is to be sanitized.
Do not vacuum or sweep droppings - spray down with bleach and wipe.
Sanitize all work surfaces prior to using and ensure food is always kept in pest proof containers.
Correct immediately.
Continue working on pest control measures.

Observation: Undercoutner prep cooler at 8 C and mouldy.
Corrective Action(s): Do not use this cooler until it is serviced/replaced and able to maintain a temperature of 4 C or below. Remove mould from cooler. Correct immediately.

Routine Inspection
Handwashing sink equipped with hot/cold running water, liquid soap and single-use towels.
High temperature dishwasher reached a temperature of at least 71 C on the plate surface during the final rinse cycle.
Bleach sanitizer at 200 ppm available in a bucket. Cloths stored in solution.
Quats in a spray bottle available for tables in front. Ensure solution is made as per manufacturer's recommendations.
Walk-in cooler at 4 C or below.
**Ensure foods are properly covered with a food grade lid (and not stacked on top of one another and without a cover or lid in between). Do not store scoops in food.
Standing coolers at 4 C or below.
2 drawer cooler on prep line not working and not in use.
Freezers at -18 C or below.
Proper cooling methods observed.
