Observation:
1) Racks of cooked product are wheeled through the middle of the room where raw surimi are handled to get to the other side for cooling.
2) Blocks of cooked crabmeat are now shredded with a grinder with a metal blades. No control in place to prevent potential metal hazards.
3) Worker's sleeves came into contact with the cooked product on occasion.
Corrective Action(s):
1) Cool the cooked product in the space next to the ovens.
2) Develop monitoring procedures to ensure that the metal blades are intact (grinder and silent cutter). Add to your Food Safety Plan. A metal detector is recommended.
3) Ensure that the cooked product is protected from contamination that may be on worker's garment.

Observation: The boot wash mats were dry and had no sanitizer in them.
Corrective Action(s): Ensure that sanitizer is availble in the mats and are changed regularily. Do not store broom and brushes on the mat. Store on a rack mounted on the wall.

Comments

The facility produces ready-to-eat imitation crab meat from surimi inside a processing room that is in a warehouse (21 Century Trading).
General sanitary condition of the processing room is satisfactory. Walls, floors, drains and ceiling are clean. No obvious signs of pest infestations noted in the room.
**Keep the sliding door at the entrance to the room close to keep out pest.
Temperature of the refrigeration unit in the room is satisfactory. Temperature of the refrigeration and freezer units in the warehouse were also satisfactory.
Thermometers were available. Imitation crabmeat reached at 91C at the end of the cooking period.
Temperature and sanitation records are maintained.
Obtain test strips specific for testing chlorine based sanitizers (should be 100-200ppm for food contact surfaces) .
Ensure gloves used by staff handling the cooked product are changed (when doing different tasks or and at least every 4 hrs). If the gloves are reusable, ensure that they are properly sanitized.
