Observation (CORRECTED DURING INSPECTION): Tongs stored at room temperature for hot dog distribution are only washed once per day. CORRECTED DURING INSPECTION - all tongs were washed and sanitized during inspection.

Corrective Action(s): Ensure ALL staff are taught how to set up sink for washing of tongs and other utensils that may require cleaning and sanitizing during the day/night. Ensure sanitizer solution is set up in back sink at all times for ease of sanitizing.

- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Two functional sink plugs available for use observed
- Iodine solution for F'REAL; CocoCola machine sanitized nightly by staff and biweekly from Coco Cola staff
- Proper re-heating methods observed for previously cooked food items - cooking in under counter unit until 165 F is achieved
- First In First out and date stamping methods observed in use - items all discarded after 4 hours
- Back door closed during inspection
- Cooler handles and seals in good sanitary condition
