Follow up inspection:
-Clean magnetic strip was wall-mounted above the prep. table and knives were stored on it.
-Wooden knife holder was removed.
-Curries inside the walk-in-cooler were at or below 4 degrees C. Curries were filled about half the level in the storage containers.
-A cooling wand was available onsite. Make sure this cooling wand is cleaned, sanitized, and air dried after each use and is stored in a way to protect it from contamination between use.
-Rice in the walk-in-cooler was at or below 4 degrees C.
-Raw meat was stored on the lowest shelf of the walk-in-cooler separately from other food.
-100 ppm chlorine sanitizer was setup in the bucket with a wiping cloth in the kitchen.
-Temperature log of refrigeration units was being maintained since last week.
-Operator had cooling log templates on-site and one log was completed.
-A probe thermometer was available on-site.
Continue with temperature monitoring of food and documentation throughout each day.
