Observation:
The gasket/seal around the door of the walk-in-freezer is damaged. Warm air is entering and/or cold air is exiting, this is causing ice to build up on the interior of the door frame and on the floor. Ice on the floor is a slipping hazard to staff, and more energy is being used to keep food frozen (cold air exiting).
Corrective Action(s):
Replace the door gasket/seal so the door can closed tightly and prevent cold air from exiting (or hot air from going in).

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -21C; hot holding units 60C; and thermometers present.
- Low temperature dishwasher had [Cl2] of 100ppm during the rinse cycle.
- Glasswasher had [I2] of 12.5ppm during the rinse cycle.
- Quats sanitizer in spray bottles and soaking utensil inserts was 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; raw proteins store on lowest shelves below RTE foods; and foods 6" off the floor on shelves or platforms.
- No expired foods found in use. FIFO rules being followed.
- Foods handled with utensils. Disposable gloves worn to complete a task and then discarded when completed.
- General sanitation level is good, improvement seen in this area. Exhaust canopy professionally cleaned in April 2018, and is done every 3 months. Staff clean exhaust filters weekly.
- No signs of pests.
- The 2-comp. sink across from the deep fryers has running hot and cold water. The faucet has been repaired.
- FoodSafe certified staff present. Any staff who possess a certificate that has expired or there is NO expiration date printed on it, must immediately register for the refresher course. Go to www.foodsafe.ca.

**Found some wiping cloths being stored in a bucket/container of sanitizer, but majority of cloths are not. Remind staff that all cloths MUST be fully submerged and stored in sanitizer when not in use. The sanitizer liquid MUST be changed at least every 2 hours.**
