Observation (CORRECTED DURING INSPECTION): Over 400 PPM detected in the QUAT sanitizer spray bottle.
Corrective Action(s): **Issue corrected at the time of inspection** Manager diluted the sanitizer spray bottle and used test strip to verify that the concentration was at 200 PPM. Please use the test strips everytime when QUAT is dispensed from the dispenser or over time when the sanitizer solution has been in the bottle for some time to verify that it has between 200 - 400 PPM QUAT before using.
Using over 400 PPM QUAT may lead to the sanitizer not completely evaporating and may lead to a chemical hazard for consumer if transferred to food.

Corrective Action(s): Repair the cracked floor tiles. All surfaces in the preparation and storage areas must be in good repair to allow for effective cleaning and to prevent debris from getting in between the cracks

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4C or below.
All freezer units were at -18C or below.
Proper storage hierarchy observed. Food stored protected.
Food in the hot hold units were noted over 60C.
General sanitation of the fume hood, deep fryer and interior of the ice machine noted excellent.
Low temperature dish machine was detected with 100 PPM chlorine residual.
No pest activities noted at the time of inspection.
Mop bucket noted emptied and not in use - good.

Note: Please ensure the handles of utensils are never touching food to avoid potential cross-contamination of food.
