Observation: 1. Mildew observed on the plastic plate inside the ice machine. Ice scoop stored on a dusty surface on top of the ice machine.
2. Two knives stored in the gap between prep table and under the counter cooler. Food debris build-up observed in the gap.
Corrective Action(s): 1.Clean and sanitize the interior and the door of the ice machine. Discard the current batch of ice and the first batch of ice after sanitizing the machine. Stored ice scoop in a sanitary container. Correct by: immediately.
2. Clean and sanitize aforementioned knivies before using them. Stored knives in a sanitary container that is made from non-porous material. DO NOT stored knives in between gaps. Corrected during inspection.

Observation (CORRECTED DURING INSPECTION): Single-use paper towel was not provided at the bar area hand washing station.
Corrective Action(s): Provide single-use paper towel at the aforementioned hand washing station.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Rubber seal on the walk-in freezer door was not sealing properly. A gap was observed when the door was closed.
2. Hand washing station near the back entrance was clogged. Waste water could not be drained properly. Water leakage also observed from the pipe connection.
Corrective Action(s): 1. Replace / fix the rubber seal to ensure walk-in freezer door can be sealed properly. Correct by: April 5, 2019.
2. Unclog the hand washing station and fix the leaking drainage pipe to ensure proper hand washing can be practiced at this sink. Correct by: March 29, 2019.

Comments

Routine inspection:
- Coolers maintained at 4C or lower.
- Walk-in freezer functional.
- Under the counter and stand-up freezers at -18C or less.
- Hot potentially hazardous food hot held at 70C.
- Other hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- Higher than 200 ppm chlorine solution available in buckets. Staff diluted the solution to 200 ppm chlorine solution.
- Dry storage area organized.
- General sanitation satisfactory.
- No pest activities observed.

Note: Maintain an accurate temperature logs for all coolers and freezers on site. Current temperature log has temperature records available until March 31, 2019 (today is March 22, 2019). Staffs were not maintaining the log properly.
