Observation (CORRECTED DURING INSPECTION): - Handsink in sushi prep area was completely blocked with empty containers. The access is completely blocked with a new upright freezer unit that is put in sushi prep area
- Handsink in back prep area was blocked with stainers basket with vegetable trimmings in it
Corrective Action(s): - Remove all equipment and utensils from the handsinks and move the freezer unit to a side to ensure that the handsink is available for handwashing and it must be easily accessible

Observation: The facility has been renovated (without approval). Sushi prep counter is finished in a way that is not smooth and grouting of the counter top can lead to accumulation of dirt and food debris.
Corrective Action(s): - Re-finish the counter tops of sushi prep area and front area(where soup warmer is placed). Ensure that the food contact surface is smooth, easy to clean and non absorbent to moisture

- All coolers are less than or equal to 4C(upright glass cooler, prep cooler, sushi prep cooler, domestic cooler)
- All (three)freezer units are functional
- Hot holding units for rice and soup are greater than 60C
- High temperature dishwasher is measured at 71C during final rinse cycle at the dish level
- Sanitizer in spray bottle is available at 200ppm chlorine concentration
- General sanitation is satisfactory
