Corrective Action(s): Clean santized dishware are to be stored in a clean, dry location to protect them before next use. Do not store utensils in santizer solution as this presents a chemical contamination risk for food items. Sanitized surfaces must be allowed to air dry before their next use. Violation Score: 9 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Left side of walk-cooler - shelving racks and floor underneath covered with debris and mold growth. Food containers observed properly covered in walkin cooler. Ready to eat foods stored separately, away from raw meats. Sanitizer buckets available with 200 ppm quaternary ammonia sanitizer for the storage of wiping rags. Spray bottles tested, contained 200 ppm Quaternary Ammonia sanitizer. Broken mixer head discarded, at time of inspection. High temperature dishwasher 73 C Food samples collected for laboratory testing: Beef stew, chicken currry and meat ball sauce.
