Observation (CORRECTED DURING INSPECTION): Observed staff member spraying a dirty tray that was contaminating the clean sanitizer water.
Corrective Action(s): Ensure that staff are instructed on the proper method of cleaning dishes in the three compartment sink and that they prerinse dishes prior to cleaning and filling the third compartment sink with sanitizer. Empty, clean and then refill the third sink with sanitizer immediately.

Chicken and gravy were being hot held at 60 degrees Celsius or hotter.
