-Follow-up inspection to September 26, 2019.
-No cooked foods cooling at the time of inspection. Reviewed cooling procedures with staff. Cooked foods are cooled from 60C to 20C at room temperature in a metal bowl and a water bath. After two hours, the food items are transferred into plastic containers (half full) and cooled in the refrigerator.
-Did not find foods from unapproved sources at the time of inspection. Operator provided an invoice for the chicken from an unknown source found during the last inspection. Ensure all invoices are kept on-site for foods not made at the facility or are not packaged in containers with the manufacturer’s information.
-No food preparation was being carried out in the back room at the time of inspection.
-Fruit flies are no longer being observed in the facility.
-Cardboard lining by the handwash station has been removed. All surfaces are smooth, non-absorbent, and easily cleanable.
