203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 4 large boxes of deep fried chicken nuggets were not properly cooled. Internal temperature of food ranged from 35C to 45C. All foods must cool from 60C to 20C in 2 hours and then 20C to 4C in 4 hours. To cool large amount of food products, place them on the large metal pans on the roller rack, and then place food products in smaller containers while being cool in the cooler.

Observation (CORRECTED DURING INSPECTION): Chopping knives stored between cutting block and standup cooler. As this area cannot be frequently washed and sanitized, this method of storage is not permitted. Have a proper knife holder available.

Observation (CORRECTED DURING INSPECTION): Food handlers were handling cooked food products with rubber gloves. Gloves were not changed and no handwashing was observed. Ensure to wear disposable gloves and are changed and disposed after each use. Wearing gloves does not replace hand washing.

Observation: Cockroaches noted in the following areas:
- Storage area in the kitchen under the stairways
- Behind standup cooler by the cooking unit
- dry storage area in the up-stair area.
Facility currently has a monthly contract with a pest company. Since there is an active cockroach problem, more frequent service is required. The following must be done:
- Move equipment at least 6 inches away from the wall to monitor problem.
- Place traps to identify problem areas.
- Identify and seal all entry points.
- Maintain all pest reports onsite. Pest report must indicate where the problem areas are and what corrective actions need to be taken.
- Daily cleaning to prevent accumulation of food and grease, especially in hard to reach areas.
- Ensure not stagnant water is accumulated.

Observation: Back screen door is not pest proof as there is a large gap present. Back open was open at the time of inspection. If backdoor is open, a tight fitting screen door needs to be installed.

Observation: More frequent clean is need to help rectify cockroach problem. Ensure there is no accumulation of grease or food behind cooking units, underneath shelving units, and dishwashing area.
