Observation (CORRECTED DURING INSPECTION): Individually pre-packaged cheese stored above 4 degrees Celsius.
Corrective Action(s): Baby belle cheese was found in a display cooler (across from bread slicer) that was at 20 degrees Celsius. Operator said the cooler is meant primarily for storing sweet baked goods (i.e. cookies, brownies, etc.) and intentionally adjusted the temperature higher than 4 degrees Celsius for improved quality of the sweet baked goods. Informed operator that cheese must be stored at 4 degrees Celsius or less unless otherwise indicated by the manufacturer. Instructed operator to discard cheese as it had been stored in the display cooler for 1 month.

Observation (CORRECTED DURING INSPECTION): Croissants were not covered to prevent contamination.
Corrective Action(s): Croissants in service area shall be sufficiently covered to prevent contamination from customers standing at the front service area. Operator placed a cover over the croissants.

Observation (CORRECTED DURING INSPECTION): White cutting board was found to have excessive wear from daily use.
Corrective Action(s): Informed operator that plastic cutting boards with excessive wear shall be discarded as they are more difficult to properly clean and santiize. Instructed operator to discard the worn out cutting board and to use the extra cutting board that was in storage. Also discussed with operator to thoroughly wash and sanitize cutting boards after each use to prevent build up of filth/grime or mildew.

Comments

General observations:
Walk-in cooler was less than 4 degrees Celsius.
Preparation cooler was 4 degrees Celsius.
Display cooler for meats and block cheeses was 7-8 degrees Celsius at time of inspection. Operator said the cooler was opened and closed many times just prior to inspection due to morning preparation. Informed operator to monitor the temperature closely for the next hour and ensure it returns to 4 degrees Celsius or less. If the cooler does not operate at the correct temperature it shall be serviced/repaired immediately.
Far display cooler (closest to double sink) is not in use as it is out of order.
Food display and storage practices appeared satisfactory (except as noted above).
Hand wash stations stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Staff hygiene and food handling practices appeared satisfactory,
Bleach sanitizer for wiping cloth had a chlorine concentration of 200ppm.
General sanitation was satisfactory.
Discussed with operator to ensure meat slicer is thoroughly cleaned and sanitized after each use. Operator indicated they use the meat slicer on a daily basis. The black colored slicer is not in use.
Chemicals were stored in a safe manner.
No signs of pests.
