Observation: - Food products (white chocolate chips, box of graham crackers) stored on shelf which was on the floor and was not 6 inches off the floor. Box of white chocolate was open and not tightly closed.
Corrective Action(s): - Store all food items 6 inches off of the floor. Repair shelf so that it is not directly on the floor to allow adequate space to store food items.
- Ensure packages are closed tightly to prevent contamination. Recommend storing food items in pest proof containers. [Date to be corrected by: 12-Aug-2021]

Observation: - Accumulation of spills/food debris noted on floor on each side of 2 door stainless cooler in front service area
- Spills noted on interior of 3 door cooler
- Grime noted on handles of coolers/freezers
Corrective Action(s): - Pull out 2 door cooler out and thoroughly clean floor to remove all food debris
- Clean interior of 3 door cooler to remove all spills
- Clean and sanitize handles of equipment. As these are high touch surfaces, the handles should be cleaned and sanitized frequently as part of your sanitation procedures.

Observation: - Corner protector on wall near back exit is loose and is being held on by tape

Observation: - Operator not present and none of the three staff members present have completed Foodsafe level 1 (or equivalent)

Comments

- Handsinks in food preparation/service area supplied with hot and cold water, liquid soap and paper towel
- Staff were noted to be wearing gloves. Ensure gloves are removed and hands are washed when gloves may have become contaminated such after touching surfaces which are not clean and sanitized.
- Staff/public washroom maintained with liquid soap and air dryer for handwashing
- Coolers were operating at 4C or colder
- Freezers were maintaining food products in a frozen state
- Dipper well operational and in use for
- In use wiping cloths were stored in bleach sanitizer solution (100ppm chlorine)
- Manual dishwashing in place. Bleach sanitizer solution present in sink for sanitizing step. Concentration measured 100ppm chlorine.
- Cleaning and sanitizing instructions are present on ice cream machine. Ensure these procedures are followed and frequency of cleaning and sanitizing is completed according to the sanitation procedures.
- Staff reported blender pitchers (for milkshakes) are cleaned and sanitized after each use.
- No signs of pest activity noted at time of the inspection.
