Observation (CORRECTED DURING INSPECTION): One of the three burners for donair meat observed turned off during inspection. Staff turned on the burner during inspection.
Corrective Action(s): All potentiallyl hazardous foods must be stored at 60'C or higher at all times or at 4'C or lower to prevent bacteria growth and/or toxin production. The donair burners must be kept turned on at all times prior to being secondary cooked.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand washing station located at back not supplied with liquid soap during time of inspection. Wall-mounted automatic dispenser is not functioning. Staff placed soap in a dispenser next the hand washing station.
Corrective Action(s): Ensure all hand washing stations are supplied with liquid soap, paper towel, hot and cold running water to facilitate proper handwashing practices prior to food handling.

Observation (CORRECTED DURING INSPECTION): Two dented cans (2X2.84L) of olives observed in the dry storage area. Staff removed the cans off the shelf to be discarded and/or returned to the supplier.
Corrective Action(s): Check all food packaging to ensure they are in good condition before foods are stored on premises to ensure they are protected from contamination. Dented cans may put the food at risk of aerobic conditions which can allow bacterial growth and/or toxin production. All dented cans must be returned to the supplier or discarded.

Routine Inspection Conducted

1. Temperatures:
- Sandwich cooler at 3'C (top and bottom)
- Glass display 2-door cooler at 3'C
- Glass display 2-door freezer at -19'C
- Under-counter prep cooler at 3'C
- Hot-holding units measured at >60'C
- Temperature log maintained

Note: sandwich cooler observed stored on premises not in use. Remove any items which are not in use off premises to maintain sanitary facility and to prevent pest entry and harbourage

2. Sanitation:
- General sanitation of premises good during time of inspection
- Hand washing station next to prep area supplied with liquid soap, paper towel, how and cold running water
- Bleach sanitizer in spray bottle (labelled) measured at 200 ppm chlorine concentration with test strip
- 3-compartment sink available with drain plugs for manual ware-washing
- Ventilation hood kept in good sanitary condition
- In-use utensils for rice cleaned and sanitized every 2 hours (as per staff)

3. Storage:
- All food observed covered and stored at least 6 inches off the floor
- Chemicals are stored away from food

4. Administration
- Foodsafe level 1 trained staff available on premises
- Operating permit visible during time of inspection
