Observation (CORRECTED DURING INSPECTION): Some meats were currently in storage in malfunctioning walk in cooler.
Corrective Action(s): Moved to an operational system at time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Observed staff cleaning a heavily soiled band saw with improperly diluted sanitizer and dirty rag.
Knives in sink were sprayed off then put back into storage.
Corrective Action(s): 1) Always store rags in food grade sanitizer (100ppm bleach)
2) ALL food equipment must be washed, rinsed, then sanitized. Wash with warm soapy water, rinse off, then sanitize using your 100ppm bleach spray. This must be done at least every 4 hours.

Staff were instructed on proper cleaning procedure at time of inspection

Observation: Closed top coolers (both rows) ranged from -1C to -6C. Freezers full of product.
Corrective Action(s): Repair these freezers to maintain -18C or below.

304 - Premises not free of pests [s. 26(a)]
Observation: Heavy rodent droppings found throughout facility. Routine clean up and monitoring not occurring.
Shelving has been put up which blocks access to high rodent activity areas.
Corrective Action(s): 1) Email/ fax/ drop off your most recent pest reports to your EHO
2) Do a deep clean of your facility. This means moving shelving and exposing walls
3) Spray down droppings with 1 part bleach : 9 parts water, wipe up while wet.
4) Remove damaged food product
5) Have a pest control company do a visit to reset traps, fill holes, etc. They must be able to access all areas of the store in order to help make the situation better.
