Observation (CORRECTED DURING INSPECTION): Spray bottle labeled as sanitizer in the front area measured between 50 and 100 ppm quats.
Corrective Action(s): Sanitizer spray bottle was refilled with quats at 200 ppm. Ensure sanitizer is maintained at concentrations required for effective sanitizing of food contact sufaces (e.g. 200 ppm quats). Change sanitizer as often as needed in order to maintain effective concentrations and verify concentration with test strips.

Observation: Floor finish / sealant is missing in large sections in back area.
Corrective Action(s): Ensure all flooring in back area is smooth, non-slip, non-absorbent, durable, easy-to-clean, and suitable for the intended purpose. Ensure no cracks or spaces are present and ensure floor-to-wall junctions are properly sealed to prevent entry of debris. Date to be corrected by: February 6, 2019.

Routine inspection conducted:

- Coolers at 4 degrees C or less*
- Freezers at -17 to -19 degrees C
- Dipper well for scoops is in use
- Food is protected from potential contamination
- Hand washing station is unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Three compartment sink set up for manual ware washing. Three sink plugs are present and 200 ppm quaternary ammonium compounds (quats) detected in sanitizing compartment.
- Quats test strips that are within expiry are available on site
- Stored equipment and utensils observed to be in sanitary condition.
- Discussed cleaning and sanitizing procedures for in use equipment. It was stated that items are washed, rinsed, and sanitized at the three compartment sink throughout day (more often than every four hours).
- No signs of pest activity observed
- Temperature records well maintained
- Operator's FOODSAFE certificate is valid to May 4, 2022.
*Note: One cooler at greater than 4 degrees C is in use for whole fruits and vegetables only (uncut).
