Observation (CORRECTED DURING INSPECTION): Two bags of dry food that were not stored in bins were observed with chew holes in the packaging.
Corrective Action(s): Food discarded. Ensure that all food is protected from potential contamination and from access by pests. Use pest proof containers with fitted lids for food storage.

Observation (CORRECTED DURING INSPECTION): Yogurt processed on site without health approval. One fifth of a large bucket of yogurt that was processed on site was observed in the walk in cooler.

Observation (CORRECTED DURING INSPECTION): Yogurt processed on site without health approval.
Corrective Action(s): Ensure all foods are obtained from an approved source. Yogurt discarded.
A written food safety plan must be submitted to the Environmental Health Officer if proposing to process yogurt on site. Food safety plan must be approved in writing by the Environmental Health Officer BEFORE processing yogurt, and facility must adhere to applicable legislation (Dairy Plant Exemption Regulation, Food Premises Regulation). Going forward, ensure all yogurt that is purchased is kept in its original container until use. Ensure receipts/invoices are available upon request for yogurt on site.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings observed predominantly along the permeter of the floors in the kitchen and adjacent storage room. Note: Cook line area floor is in clean condition. Few droppings also observed on lower shelves of prep tables and in sweets walk in cooler (on floor / in corners).
Corrective Action(s): Ensure all of the areas affected by rodent droppings are thoroughly cleaned to remove all droppings, and sanitized. Date to be corrected by: December 6, 2024. Note: Operator stated a pest control visit is scheduled for December 5, 2024.

Observation: Holes observed in some areas, including where electrical wiring comes out of the ceiling at the back of the kitchen.
Corrective Action(s): Ensure all holes/gaps that may permit pest entry are effectively sealed. Date to be corrected by: December 18, 2024.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Door handle to kitchen walk in cooler is not sealing (spring appears to be broken).
2. Electrical breaker/switch keeps tripping and not allowing the high temperature dishwasher to operate long enough to reach the required operating temperature (only 61 degrees C was reached at the plate level).
Corrective Action(s): Operator aware of both problems, technician contacted to correct issues noted above. Operator stated that manual warewashing procedures have been in use since the dishwasher was having issues, for approximately one week. Note: limited dishware for dine in. Single use dishware to be used in interim until dishwasher has adequate power supply and is in good working order and capable of washing and sanitizing dishware. Date to be corrected: December 6, 2024.
Door handle to be in good working order and capable of keeping walk in cooler door shut. Date to be corrected by: December 11, 2024.

Routine health inspection.
Walk-in cooler (main kitchen) at 1 degrees C.
Walk-in cooler (storage room on left) at 3 degree C.
Prep cooler at 4 degrees C (above) and 3 degrees C (below).
Sweets coolers at 4 degrees C or less.
Walk-in freezer at -18 degrees C.
Upright freezer is not turned on and not in use (note: adequate freezer storage on site).
Thermometers/temperature gauges in place for cold holding units.
Proper cooling procedures in use. Cooked food is frozen to help facilitate rapid cooling and then defrosted in the walk in cooler.
Raw meats/eggs not stored above ready-to-eat food. Food is generally covered.
Hand sinks are accessible and supplied with hot and cold running water, liquid soap, and paper towels.
Two compartment sink supplied with hot and cold running water.
Three compartment sink supplied with hot and cold running water and sink plugs. Bleach water sanitizer prepared in third sanitizing compartment at 100 ppm chlorine.
Bleach water sanitizer available in buckets with wiping cloths and was measured at 200 ppm chlorine.
Stored equipment and utensils maintained in sanitary condition.
Upstairs area is used for storage of packaging (no food) and is generally maintained in clean condition.
Buckets and bins with lids in use for dry food storage, with few exceptions.
FOODSAFE requirements met. Certificate for staff on site valid to July 25, 2029.
Premises is serviced by pest control on a bi-weekly basis. Reports available for review.
