Corrective Action(s): Prime the line with sanitizer immediately to achieve final sanitizer rinse of 50ppm chlorine at plate surface.

Observation: The following areas were observed being in need of cleaning to facilitate safe food handling:
1) Edge of ice machine lid
2) Handle of dishwasher
3) Handles of coolers, freezers, and meatslicer counter drawers
4) Under dishwashing sink - please move broken-dish bin and cleaning chemical containers, and clean away food debris build up in this area.

- Hand wash sinks have hot and cold running water, liquid soap, and paper towel throughout food preparation areas, and staff washroom
- Dishwasher reached 54.3 degrees Celsius and 50ppm (after correction); glass ware washer achieves 50ppm chlorine
- Pest-proof food grade containers used to store food throughout premise; no foods stored on floor
- Standing freezer in kitchen, and two chest freezers hold below -18 degrees Celsius
- Standing cooler, walk-in cooler, cook line prep cooler all hold below 4 degrees Celsius
- Hot holding unit holds above 60 degrees Celsius - Reminder: keep lids fully covering foods in hot holding unit
- Meat slicer cleaned and sanitized immediately after use
- Ice scoops stored outside of ice bins
- No signs of new pest activity; efforts to control rodent activity noted; professional pest control services in place and effective based on observations during inspection
- No major food debris build up throughout premise (dish pit needs some cleaning)
- Overall sanitation is satisfactory
