Comments

Met with kitchen Manager, "J", and we discussed the following:
- at least one person per shift must have a Food safe level 1
- daily temperature logs MUST be up to date/ please ensure to keep a daily logs for you sanitizers/and high temp dishwasher
( all coolers are operating at 4C or below )
- high temp dishwasher reached 180F at the final rinse
- glass washer iodine in used and measured at 12.5ppm
- test strips are available on site
- quat used as approved sanitizer ( measured at 300ppm ) - ensure to have a quat no more than 400ppm of concentration
- all sanitizer's bottle to be properly labelled
