Observation (CORRECTED DURING INSPECTION): In-use wiping cloth for cutting board left on the counter at room temperature in between uses.
Corrective Action(s): Wiping cloth should be stored in the container of bleach and water that is available next to the preparation cooler. Operator corrected at time of inspection. Wiping cloth and bleach and water solution should be changed every 2-3 hours.

Observation: Large (opened and unopened) paper bags of flour stored on or near the floor.
Corrective Action(s): Opened and unopened bags of flour need to be stored in a covered rodent proof container or on a shelf. Rodent proof containers need to have secure lids to prevent rodent entry.

304 - Premises not free of pests [s. 26(a)]
Observation: Rat and mouse droppings found in back storage area, on the floor and some of the lower shelves. Rodent droppings were not found anywhere else and mechanical traps set up by the operator are in use throughout the premise. Clean up all droppings and sanitize the affected areas. Monitor for rodent droppings everyday and clean up any droppings found immediately. If new droppings are found, this indicates an active rodent infestation.

Observation: Organization of back storage area is poor and may provide harborage for rodents.
Corrective Action(s): All equipment or supplies that are not needed for day to day operations shall be removed from the premise. Organize the storage area by providing adequate shelving and keep items off the floor. An organized storage area will assist in monitoring for rodent activity.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Mould found on the floor beside the 2-compartment sink; and bread crumbs/flour found on the floor, equipment and behind equipment in all areas.
Corrective Action(s): Clean up the mould and keep this area clean and dry to prevent growth of moud and mildew. Clean up all bread crumbs and flour from the floor and equipment on a daily basis to prevent attracting rodents.

Observation (CORRECTED DURING INSPECTION): Cutting board at preparation cooler is damaged (due to repeated use of knives in several spots) and is not in a condition that makes it difficult to clean and keep clean.
Corrective Action(s): Use the other side of the cutting board or replace the cutting board. Operator flipped over the cutting board at the time of inspection.

Comments

General observations:
Coolers were 4 degrees Celsius or less.
Freezers were less than -18 degrees Celsius.
Coolers and freezers were equipped with thermometers.
Food storage practices (except as noted above) were found to be satisfactory.
Hand sink in the back and hand wash station in the front equipped with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Food handler hygiene appeared satisfactory.
Bleach sanitizer was 200ppm
Chemicals were stored in a safe manner.

Discussed with operator that if they do not need the second meat slicer and do not intend to repair/replace the out or order display cooler, these items need to be removed from the premise. Premise has adequate cold-holding capacity with the other existing coolers/display coolers.
Out of order lighting in the back storage room (noted during the September 5, 2017 inspection have now been repaired and in operation.
