Temperature records were up to date.
No evidence of pests. Pest control report available on site.
The dishwasher's final rinse cycle reached 77 C at the plate level.
Quats sanitizer solution was at 200 ppm in the 3-compartment sink and in the buckets.
General sanitation was satisfactory.
