302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 4 bleach sanitizer buckets tested: 1 measured at 50ppm chlorine and 1 had no detectable chlorine. Other 2 measured at 100ppm chlorine with test strips.
Corrective Action(s): Ensure sanitizers are made with consistent procedures and they are being replenished regularly during heavy usage hours. Bleach sanitizers should measure 100-200ppm when tested with test strips. Buckets containing less than 100ppm chlorine sanitizer were replaced with fresh bleach sanitizer solutions at the time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation: - Containers with no lid containing prepared vegetables in 2 door cooler next to kitchen entrance.
- 4 whole chickens hanging on hooks in walk-in cooler, were touching other food containers and shelving unit.
- Plastic container with dried chilli has lots of debris build-up.
- Lots of blue plastic containers in use to store food - this material do not appear to be food grade.
- Rice grains stored in garbage bin for storage.
Corrective Action(s): - All food items should be covered in coolers to protect from contamination.
- Whole chickens were covered in food grade plastic bags at the time of inspection. In the future, ensure to have a designated area for drying of the chickens in cooler in a manner that prevents contamination. Store them at the bottom of the shelving in the cooler.
- Dirty plastic container with chilli was discarded at the time of inspection. Ensure all containers for spices go through dishwashing on regular basis. Stop the practice of topping up ingredients without properly dishwashing containers.
- Unless operator proves EHO that the containers are food grade, replace these containers with food grade containers. Using a food grade plastic bags/wraps to line the containers was discussed with manager. If the food items are bagged and/or there is no direct contact between food and containers, the existing containers can be used.
- Use a food grade container for rice grains or put the whole rice bag inside the bin so rice do not come into direct contact with the bin. Ensure the bin is cleaned & sanitized on regular basis as well.

Observation: Back door screen damaged and had large holes.
Corrective Action(s): Replace or repair the screen so that there is no gap for pest entry. Keep the main back door closed at all times until the screen is fixed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Debris build-up observed beneath the ice machine and cooking units, on top of dishwasher machine.
- Old mouse droppings and garbages observed on floors next to boiler and small shelving unit area with dried mushrooms.
Corrective Action(s): Clean the areas noted above.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: - 2 door cooler by the kitchen entrance has the bottom metal panel detaching from the unit. It has been temporarily fixed by using tapes.
- Chest freezer containing fish in the back disintegrating. Cracked/damaged lid, junctions and interior plastic parts observed.
Corrective Action(s): - Repair the unit so the metal panel is attached properly to the cooler unit. Stop the practice of using glue and tapes to fix equipment.
- Repair the chest freezer. Manager stated the freezer is old. Consider replacing the freezer in near future. No concerns with the temperature of the unit at this time.

All cooling units at 4C of below.
All freezer units range from -9C to -22C.
All hot held rice in rice cookers at 60C or above.
Low temperature dishwasher measured at 50ppm chlorine.
Proper thawing practice observed at the time of inspection.
Vent hood in sanitary condition.
Managed by Ecolab for pest control - most recent (2021-JUL-09) report states no rodent activity in the facility.
Manager has valid Foodsafe certificate.

General sanitation needs improvement and EHO recommends manager to check all equipment for any necessary repairs/ upgrades.

Follow up inspection to be conducted on July 16, 2021 to confirm corrections are made.
