Observation (CORRECTED DURING INSPECTION): Dishwasher measured at 10 ppm chlorine residual, detected at the dish surface after final rinse cycle.
Corrective Action(s): Service dishwasher such that the chlorine residual at the dish surface after rinse cycle measures 50ppm - 100 ppm. Dishwasher must be monitored with chlorine test strips daily.
Reviewed manual sanitizing procedures with staff at time of inspection. No dine-in/no customer dishes are reused. Until the dishwasher is working properly, staff will be sanitizing with SaniStuff (QUAT) at 200 ppm or with Bleach solution at 100 ppm for at least 30 seconds in the sink after dishes have been run through the dishwasher.

Observation (CORRECTED DURING INSPECTION): Hot water was turned off at the hand sink located in the cooking area. Staff stated this was done due to a leaky faucet.
Corrective Action(s): Hot/cold running water, along with liquid soap and paper towel, must be available and easily accessible at all hand sinks. Hot water at this hand sink was turned back on at time of inspection. Leak to be repaired or faucet to be replaced (also see violation code 308).

Observation: Ventilation canopy filters require cleaning and sanitizing.
Corrective Action(s): Clean and sanitize ventilation canopy filters, and do so more frequently.

Observation: 1) Dishwasher measured at only 10 ppm chlorine residual.
2) Faucet for hand sink in cook area was leaky.
Corrective Action(s): 1) Service the dishwasher such that 50 - 100 ppm chlorine residual is detected at the dish surface after the final rinse cycle. Dishware to be manually sanitized (after washing through dishwasher) in the meantime.
2) Repair or replace the leaky faucet.

Comments

- Routine inspection conducted.
- All other hand sinks were easily accessible and properly supplied with hot/cold running water, liquid soap, and paper towels (see violation codes 401 and 308 above).
- QUAT-based sanitizer solution (SaniStuff) available in sanitizing pails at 200 ppm.
- Dishwasher not sanitizing properly (see violation codes 302 and 308 above). **Dishware to be manually sanitized at two-compartment sink using SaniStuff (at 200 ppm) until the dishwasher is serviced and measured at 50 ppm - 100 ppm chlorine residual. Obtain chlorine test strips for your dishwasher to be able to monitor your dishwasher daily.
- Walk-in cooler, upright cooler, prep cooler, and sweets displays coolers were measured at 4C or colder.
- Food storage practices in coolers satisfactory at time of inspection. Food was covered and stored in organized manner.
- Upright freezer and ice cream freezer temperatures satisfactory.
- Dry storage room and other storage areas satisfactory. Pest-proof containers with secure lids available.
- No hot-holding at time of inspection.
- Equipment and utensils maintained in sanitary conditions. **Note: increase the frequency of cleaning for your ventilation hood filters (see violation code 306 above).
- General sanitation was satisfactory at time of inspection.
- Regular pest control in place. No signs of pest activity noted at time of inspection.
