Observation (CORRECTED DURING INSPECTION): Noted the deli slicer (vegetable) was not cleaned immediately after use. Breakdown all parts and clean thoroughly after each use.

Observation (CORRECTED DURING INSPECTION): Dishwasher @ 0ppm Cl detected. Noted the sanitizer container was empty.
Corrective Action(s): Ensure to check the sanitizer level everyday. The sani log was available; however, the log was not recorded for today, November 28. 2019. New sanitizer container was connected during inspection.

Handsinks: new handsoap pump to be placed instead of the existing mounting types which got fallen off.
Walk in coolers @ 4oC or less
Freezers @ -18oC or less
Undercounter coolers @ 4oC or less. Insert level @ 5-7oC.
All salad bowls and mixing bowls to be changed every 2 hours.
QUAT sanitizer @ 200ppm detected. Change the sanitizer every 2 hours. Place a time tag on each container.
Wiping cloths that are not in use must be in the sanitizer containers.
Hot holding @ 60oC or above
Glass washer @ 12.5ppm Iodine detected.
Temp record available for the kitchen equipment.
Keep the back recycling room door closed at all time to prevent pest entry into the kitchen.
