Observation (CORRECTED DURING INSPECTION): Tall cooler in the server area - air and food temperature is above 4C/40 F (43/44F food temp measured) and there does not appear to be a working thermometer (thermometer broken). Staff state that door is often left open.
Corrective Action(s): Milk, desserts, and PHFs moved to another cooler (corrected). Store all higher risk foods at 4C /40F or colder. Provide an accurate indicating thermometer for this cooler. Keep the door to this cooler closed (post sign or adjust cooler so door will close more easily). Keep daily records of all cooler temperatures.
