Observation (CORRECTED DURING INSPECTION): In-use rice scoop was improperly stored in a container room temperature water.
Corrective Action(s): All in-use utensils must either be cleaned and sanitized after each use or stored using one of the following methods:
1. Dry, in a clean empty container.
2. In a container of ice water. Ice is refilled regularly.
3. In a container of hot water ≥ 60°C.
Using the above methods, in-use utensils must be cleaned and sanitized at least every 4 hours.

- Behind, underneath, and between appliances
- High touch surfaces such as handles and faucet knobs

- Exterior of bulk food bins
- Underneath dry storage shelving
- Floors by the back door
Corrective Action(s): Fully clean all areas of the kitchen. Ensure cleaning is done regularly.

- All freezers are ≤ -18°C
- Hot holding units are ≥ 60°C
- High temperature dishwasher is available. Final rinse temperature reached 71°C at the plate level. Ensure you run several warm up cycles before using the dishwasher to wash dishes.
- 200 ppm bleach sanitizer is available. Ensure 1/2 cap bleach is used, then fill up spray bottle with water to the line.
