- Coolers maintained at or below 4 degrees Celsius . Clean cooler gaskets.
- Freezers ambient air temperatures ranged -2.5 to -20 degrees Celsius. Ensure all freezers maintain temperature at or below -18 degree Celsius. Defrost regularly to remove ice accumulation. According to the temperature logs all freezers maintain temperature at or below -18 degree Celsius.
- Hot holding maintained above 60 degrees Celsius
