Hand-sink supplied with liquid soap, paper towels, hot/cold running water.
Prep coolers all at 4 C or less.
Walk in cooler: 1.8 C.
Walk in freezer: -18 C.
Alcohol walk in cooler - satisfactory.
All other freezers at -18 deg C or less.
Hot holding (across cooking line) > 60 C.
Dry storage area - satisfactory.
Foods in coolers are covered and date stamped; storage is well organized.
Quat sanitizer and Bleach in spray bottles; (purple solution) at 200 ppm Quats; Bleach > 100 ppm ?located throughout kitchen and in bar area/.
Dishwasher at 50 ppm of Chlorine solution.
Glass-washer (iodine) at 12.5 ppm.
