Observation: The back kitchen hand washing sink near a prep. area has been removed.
Corrective Action(s): The back kitchen hand washing sink near prep. area must be available. Please put it back as per the previously approved floor plan.

Observation: Water is constantly leaking on the kitchen floor. Staff regularly mopping the floor but it is wet; as well as buckets with water have to be regularly dumped.
Corrective Action(s): Immediately. Rectify the issue.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: The back kitchen hand washing sink, ladies staff washroom, and dry storage area are removed at the time of inspection.
Boxes with single use utensils stored directly on the floor when the sink and washroom was previously located.
Corrective Action(s): All items must be stored at min 6 inches off the floor. Please put back all missing equipment and items that were removed.

Comments

Premise is found renovating and upgrading without a Health Approval.
The operator on site claimed that due to an emergency situation a renovation/upgrading started.
- Walk-in cooler and freezer combo is not in service. (Note: Walk-in cooler and freezer were replaced but inner work is not completed; and it is in a progress.)
- Underground grease trap was removed. A back kitchen hand-washing station and ladies staff washroom near the underground grease trap were removed.
- Temporary grease trap was observed on the restaurant parking lot.

General sanitation - satisfactory.
Front hand-washing station supplied with cold/hot running water, soap, and paper towels.
Front prep. coolers (at customer service area) < or = to 4.0 C.
Small walk-in cooler( dairy) at 3.8 C. (Note: Small amount of different kind of food stored in this cooler at the time of inspection).
Small freezers (French fries and burger patties) - satisfactory.
All hot holding units (heated well food warmer, bins, headlights) > 60.0 C.
Note: Plastic trays with buns stored on a site of the front prep. area.
Three compartment sink available for manual dishwashing/was set at the time of inspection. Sanitizer at 200 ppm of Quat solution.
Surface sanitizer was available red buckets with presoaked wipes at 200 ppm Quat solution.
Ice-maker - clean; a scoop is stored safely at the time of inspection.
No signs of pest activity at the time of the inspection.

Note: Paper towel was unavailable in the men's staff washroom at the time of inspection. However, the operator claimed that this washroom is not in use. If this washroom in use - must be stocked properly.

Note: The operator claimed that an extra food stock located at the Guildford area (a different Wendy's Restaurant) and delivered to the site every hour.

Ensure you contact to the Health Department for the inspection as soon as the upgrading/renovation is finished.
Note: All equipment must be in a good working order.
