Observation (CORRECTED DURING INSPECTION): - No sanitizer spray bottle observed during inspection.
- Following instruction, Chef prepared 100ppm bleach for sanitizing food contact services. In the meantime, Chef ordered Ecolab Quats sanitizer.

Comments

- Overall sanitation was satisfactory.
- There has a few events per week, so food overturn is fast. Random selection of foods were within their Best Before Dates.
- Total staff 7. 3 of them have had Food safety training.
- There were 4 staff preparing food for Friday events in the kitchen. No food cooking or reheating, no food on hot holding or chilling process during inspection.
- Hand wash sink was equipped with hand soap, hot/cold running water and paper towel.
- Walk in cooler 2.8C. Food properly covered, labelled, and well organized.
- Condiment cooler (top and bottom) < 4C.
- Walk in freezer -19.7C. Food containers sealed properly.
- Dishwasher measured 75.3 C - Excellent!
- Ice machine was in a sanitary condition. Scoop was properly stored.
- Some of the kitchenware and soiled cloth were cleaned by a professional company.
- General food storage practices good at the time of inspection. Foods stored off floor and protected from potential contamination.
- Facility is serviced by Kwality pest control company twice a month. No pest activity observed during inspection.
- Washroom clean and sanitary. Handwash station equipped with liquid hand soap and paper towel.
