Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available for use at beginning of inspection.
Corrective Action(s): Sanitizer solution must be available for sanitizing food contact surfaces at all times during hours of operation - not just during clean-up. Operator made bleach solution at time of inspection, 100 ppm chlorine detected. **Ensure to change this solution every 4 hours at a minimum, or sooner if the solution is visibly dirty.

Comments

- Hand sinks supplied with hot water, liquid soap, and paper towels
- Two-compartment sink available for manual warewashing
- All coolers were at or below 4C
- Freezer was below -18C
- All scoops and tongs were properly stored; no scoops stored directly in dry ingredients
- Dry ingredient bins had proper lids. **Food storage organized, however ensure all food stored in coolers are covered (see violation code 209 above)
- General sanitation satisfactory; no grease build-up or old food debris present on equipment or floors.
- No signs of pest activity noted at time of inspection

*Note: Large pan of potatoes and samosa filling cooling at time of inspection. Ensure to cool hot food from 60C - 20C within 2 hours and from 20C - 4C in the cooler within 4 hours.
