Follow up inspection was conducted:
-Most of the build-up was removed from the floor underneath the deep fryer area. However, regular cleaning (e.g. every week) is required to prevent grease from accumulating and to prevent potential food sources that would enable the breeding of pests.
-BBQ pork meat and other hot-held food inside the inserts was at or above 60 degrees C.
-Operator stated that they have increased the water level in the hot-holding unit case in which BBQ meat is stored.
-BBQ ducks were not hanging inside the hot-holding case at the time of the follow up inspection.
-Cockroaches were not evident at the time of the follow up inspection.
