Observation: 1. Ground work line at fryer area - a row of tie, about 1.5m is missing from the frier line.
2. Baseboard is peeling and missing along the wall of the hot water tank. No sealant around potential water area.
3. Walk in cooler seal has duct tape on top and bottom of door. Cooler temperatures are below 4C.
Corrective Action(s): 1. Replace tile in fryer area or ensure this is a smooth, non-porous, and cleanable surface.
2. Replace missing baseboards. Use sealant to ensure this area is water tight.
3. Ensure sealant maintains a good seal and keeps food temperatures <4C.

Comments

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
-Some food residue in hand sinks, ensure these are clean and sanitary for hand hygiene.
-Operator assured that this is used for hand washing only and cutting prep only happens at the back.
o Operators had clean clothing for food preparation
o Staff washrooms appear clean and are fully supplied for hand hygiene
o Public washrooms are clean and fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o No hot holding area. Pizza is delivered when made

Food Processing and Food Protection
o Cooling - No cooling
-Cooking - frozen items placed on table temporarily <30min before going into frier
o Approved Food Source - Operator keeps receipts of food ingredients from an approved source
o Food Storage - Food is stored in covered containers.
-Meats are stored on the lowest shelf and coolers are organized to prevent cross contamination

Maintenance and Sanitation
o 3 Compartment Sink is fully supplied with bleach - no sanitizing sink made during inspection as no dishes were being done
o Sanitizer buckets - have >100ppm Chlorine (around 400ppm, asked to dilute to 100ppm during the inspection)
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - there are no signs of pests at the time of inspection.
-Overhead lights have been replaced in the dry storage area and it is now very bright, thank you.
o Sanitation Plan - Operators have a sanitation plan in place
