Routine inspection conducted:
Chef not on site at time of inspection, director of operations was present. No food prep occurring on site (no food prep occurs once chef leaves)
Handsink (two compartment sink) equipped with liquid soap, hot/cold running water, and paper towels
Upright freezer in hallway at -17 deg C
All coolers (except for the above mentioned undercounter cooler) were at 4 deg C or less
No hot holding at time of inspection
2 mechanical dishwashers on site and a large single compartment sink in between them (as approved by previous area EHO)
-High temperature dishwasher (left side) achieved 73.5 deg C on rinse cycle at dish level
-High temperature dishwasher (right side) achieved 72.8 deg C on rinse cycle at dish level
-surface sanitizer in spray bottle at 100 ppm chlorine residual
-General sanitation good
-No signs of pests observed
