Observation (CORRECTED DURING INSPECTION): A large tub of rice was observed cooling on the counter at room temperature. Rice probed at 38C after 4 hours of cooling. Operator discarded the rice during the inspection.
Corrective Action(s): - Ensure potentially hazardous foods are properly cooled from 60C to 20C or less within 2 hours, and 20C to 4C or less within 4 hours to prevent microbial growth and/or production of toxins that may cause illness.
- Ensure large containers of food are transferred into shallow containers to speed up the cooling process.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): - No liquid soap was available at the front service handwashing station. Operator refilled the liquid soap during the inspection.
- Handwashing station in the food preparation area was obstructed by a pot. Operator moved the pot during the inspection.
Corrective Action(s): Ensure all handwashing stations are accessible and supplied with hot and cold running water, liquid soap, and paper towels at all times.

Observation: Mould observed in rinse station area (wall, around faucet, in between equipment and wall joint).
Corrective Action(s): Clean and sanitize the above mentioned areas to remove any signs of mould. Properly seal wall/equipment junction at rinse station to ensure no moisture enters.
