Observation (CORRECTED DURING INSPECTION): Sweet & sour pork and hot held chicken noted 45 C - 49 C.
Corrective Action(s): Ensure all hot held food is maintained at or above 60 C. All food less then 60 C for more then 2 hours must be discarded. All food is time tracked when cooked and restocked regularly during rush time. Hot hold unit elements turned up.

Violations noted on MTRG-AAYTW4 has been corrected except violation noted above.
-Cleaning has improved in all areas noted on last report
-Cold holding noted <= 4 C

***Operator has noted the temperatures for the hot hold units are constantly modified to prevent burning the food and adjusted during rush and non-rush hour periods. The unit was set too low during the rush period and was adjusted to maintain food >= 60 C. Technicians have been in to service units many times since they were installed 5 years ago. Recommended to discuss issue with manufacturer and or get other units that can maintain the temp at >= 60 C without burning the food.
