Cardboard liner noted removed.
Most hot food in the display hot hold unit were noted above 60.0C, however prawn tempura was being held with no cover (display sneeze guard was in place) with an internal temperature of 33.3C. As per staff, they cooked the prawn tempura this morning (approximately 1 hour ago).
Prawn tempura were re-fried during the inspection.
Manager/ staff must ensure that all hot food being held in a hot hold is held at 60.0C or higher. To achieve this for the prawn tempura staff must -
Preheat the hot hold unit to at least 60.0C. Fried the prawn tempura and placed the prawn tempura in the preheated hot hold unit.
Place a lid on the container of the fried prawn tempura to maintain the temperature during hot holding OR
Cook to order and not hot hold the prawn tempura if issue still persists with the hot holding temperature.
