Meat department consists of:
Raw meat processing room, raw chicken processing room, cooking room
Raw meat processing room at 10C
Equipment like band saw, grinder, and tenderizer are disassembled, washed, rinsed, sanitized at start of "cleaning" shift around 3pm
Tenderizing blades are individually removed from case weekly for a deep clean.
Chemical spray hose quat concentration reading at least 400ppm
***Ecolab called at time of inspection. Please provide by Dec 19:
Documentation stating food safety at 400ppm if that's the intended concentration
Test strips that can accurately measure concentrations at that higher range
Walk in cooler 0C
Bunkers all measured between 0C and 4C
Chicken cooking room well supplied with numerous probe thermometers and thorough temperature logs
Hot holding unit >60C. Products are pulled from hot holding unit after 2 hours, then deboned and blast chilled for further production
General sanitation of all above noted facilities good
