Comments

- General sanitation satisfactory.
- All handwashing stations supplied with hot/cold running water, soap, and paper towels. The new handsoap dispenser is recommended at the main handwashing station.
- High temperature dishwasher (kitchen) achieved 71C at the plate's level during the final rinse cycle.
- Surface sanitizers available in labeled spray bottles at 100ppm chlorine bleach concentration. Change out the sanitizer solutions regularly to ensure effectiveness.
- Dry storage area has adequate space and wire racks. Ensure that all boxes and food items are stored min 15cm off the floor to facilitate cleaning.
- Dry food items stored inside bins with tight fitting lids.
- No signs of pest activity at the time of the inspection. Operator implements own pest control management system. The operator must install traps throughout the kitchen as part of his pest management system.
- Could not verify FOODSAFE certificate. Submit copies to the health inspector.
- Ice machine in clean condition.

Temperature Control:
- All coolers (walk-in) = 4C
- All freezers (two chest): < or = -18C
- Thermometers available in all refrigeration units.
