Temperatures of all coolers (stand-up, two display, sliding door) maintained at or below 4 degrees Celsius.
Temperature of stand-up freezer maintained below -18 degrees Celsius.
Thermometers present in all cold holding units.
Concentration of chlorine (bleach) sanitizer in spray bottle = 200 ppm.

High temperature dishwasher sanitizing with 71.5 degrees Celsius at dish level after the final rinse cycle.
