Observation (CORRECTED DURING INSPECTION): Cooked rice left on stove with burner turned off. Internal food product temperature 45 degrees C.
Corrective Action(s): Instructed staff to reheat rice back to over 74 degrees C for 15 seconds then turn burner to low to ensure hot holding temperature of 60 degrees C or above.

200ppm quats available for use. Wiping cloth stored in solution when not in use.
2 compartment sink setup for manual warewashing. 100ppm bleach available for sanitizing.
Sliding glass door cooler to be serviced and currently not in use.
Front area cooler at 4 degrees C.
Back area domestic cooler/freezer cooler section at 0-2 degrees C. Freezer section at -13 degrees C.
Back area freezer at -21 degrees C.
Foods cooked/reheated on stove/oven. Probe thermometer available for use.
No hot holding at time of inspection. Hot holding units preheated and ready for use during lunch rush.
