Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer was not setup in the kitchen at the time of inspection. Only oven cleaner and soapy water was setup inside two spray bottles. Staff stated that they use the chlorine sanitizer in the spray bottle from the front service area. This sanitizer bottle had greater than 200 ppm chlorine sanitizer in it as the chlorine test strips were blanking out.
Corrective Action(s): Staff setup 100 ppm chlorine sanitizer (1/2 teaspoon bleach per L of water) in a container in the kitchen and setup 100 ppm chlorine sanitizer in the spray bottle for the front service area.

Make sure 100 ppm chlorine sanitizer is setup near food handling areas in the back kitchen and a separate spray bottle containing chlorine sanitizer for the seating tables. Check the concentration of chlorine sanitizer using chlorine test strips and change the chlorine sanitizer and wiping cloths frequently throughout the day to maintain 100 ppm chlorine sanitizer.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Previously noted paper towel dispenser at the handsink near the ice machine was repaired and it was in good working order.
2-compartment sink was operational. Faucets were in good working order.
2-compartment prep. sink was operational.
Dishwasher final rinse sanitizer residual was at least 50 ppm at the plate (measured at 100 ppm)
Chlorine test strips were available.
Walk-in-cooler and other refrigeration units were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
Hot-held food was at or above 60 degrees C in the hot-holding unit, rice warmer, and stove-top.
No signs of recent pest activity were present at the time of inspection.
Ventilation hood was in a clean condition.
Ice machine was in a clean condition.
