Observation (CORRECTED DURING INSPECTION): Sanitizer concentrate for the low temperature dishwasher was empty at the time of inspection. Operator was aware of the issue and had not washed dishware in the machine yet.
Corrective Action(s): Discussed using the 3 compartment sink for warewashing. Owner will be dropping off new sanitizer solution shortly

Comments

- Handsink stocked with liquid soap, paper towels, and hot/cold water.
- Undercounter cooler measured 2C, cake display freezer (-20C), triple door freezer (-19C), pint freezer (-18C), customer pick up freezer (-10C) and ice cream freezers (-13C and -10C). Blast freezer was not operational (defrosting)
- Spray sanitizer measured 200 ppm QUATS.
- General sanitation satisfactory; no evidence of pest activity noted.
* Reminder to keep dog treat ice cream separate from human consumption scoops.
- Only guide and service dogs (certified) are permitted in facility.
